Tamari is a brewed soy sauce made from soybeans and sea salt. Like our shoyu, it is naturally fermented in wooden kegs for many months without temperature controls and then pressed*.
Wheat-free tamari is a traditional whole food by-product of soybean miso. It is made from the liquid that exudes from the miso as it ferments.
Commercial tamari including so-called "natural" brands are often brewed with wheat which mellows its robust flavour. Nature’s Glory offers genuine tamari made from 100% soybean mash, duly certified organic by OCIA (free from pesticides and chemical additives).
Tamari is a high-quality protein seasoning. Real good tamari is very clear red colour and thickness is like shoyu but strong in flavour. It can be enjoyed in soups, salads, casseroles, with grains and vegetables, and as a condiment. Use half or one third the normal amount of commercial sauce or as a substitute for salt for better natural flavour and reduced salt intake. Rich in organic and amino acids, Tamari contains beneficial micro-organisms, necessary for natural fermentation, which aid digestion, recommendable for those on a wheat-free diet.
