Place pea sprouts in a metal sieve and place in a large bowl. Pour boiling water over the sprouts. Let sit for 1 minute, remove pea sprouts and run it over room temperature water for 5 seconds. Drain excess water by gently squeezing and tapping the sieve. Transfer pea sprouts to another bowl. Add olive oil, soy sauce and lime juice and mix together.
