Snow Pea Sprouts (Dou Miao) - 豆苗 200g
Blanched pea sprouts with olive oil and soy sauce:
1 packet pea sprouts
1 tbsp olive oil
1 tbsp soy sauce
Juice from 1 lime
1 chilli padi, as garnish
Boil water in a pot or kettle. Place pea sprouts in a metal sieve and place in a large bowl. Pour boiling water over the sprouts. Let sit for 1 minute, remove pea sprouts and run it over room temperature water for 5 seconds. Drain excess water by gently squeezing and tapping the sieve. Transfer pea sprouts to another bowl. Add olive oil, soy sauce and lime juice and mix together. Garnish with chili padi/extra lime and serve.
