Wood's ear is a nutrient-packed mushroom that's crunchy and springy! This recipe is made to be an appetiser before a meal. The crunchiness, umami and tanginess will be sure to stimulate your appetite!
1 pack fresh wood's ear mushroom, rinsed
1 pot water
1 tbsp Chinese vinegar
1 tbsp soy sauce
1 tsp sesame oil
1/2 tsp sugar (optional)
Chopped spring onions, to garnish
In a pot, bring water to a boil. Place the mushrooms into the boiling water and cook for 1 minute. Remove from heat. Strain mushrooms out and rinse over cool water. Flick to remove excess water.
In a bowl, mix vinegar, soy sauce, sesame oil and sugar. Toss mushrooms in mixture. Garnish with chopped spring onions and serve.
